Conati - Rosso di Marco
The producer's idea of offering, alongside the traditional wines of Valpolicella, a modern red wine made from autochthonous and international grape varieties, became a reality with the birth of Rosso di Marco, an elegant and high-quality wine that completes the range of red wines of Agricola Conati.
GRAPPE VARIETY - Corvina, Corvinone, Rondinella 40 %, Merlot 30 %, Teroldego 15 %, Oseleta 10 %, Croatina 5 %
TYPE OF VITICULTURE - Several methods are used due to the number of different grape varieties.
HARVEST - The different periods of ripening of the varieties and the complete maturation of the grapes on the vine are the basis of the production of this wine. Once fully ripe, the grapes are harvested by hand in crates and brought to the winery where they are vinified separately.
VINIFICATION - MATURING - The long cold maceration followed by fermentation at controlled temperatures with daily pumping over, gently of the cap allows the must to be transformed into wine over a long period, favouring maximum extraction of aromas. Ageing in oak barrels lasts 24-26 months. It is only at the end of this refinement that the blend will be made, which will rest for a few months in cement vats, necessary for the complete melting of the wine, before being bottled.
COLOUR - Ruby red tending to purple.
FRAGRANCES - With a slightly spicy nose with notes of redcurrant and red fruits, blackberry.
FLAVOUR - The palate is thick and enveloping with intense but soft tannins, a lingering finish reminiscent of tobacco and liquorice.
SERVING TEMPERATURE - 16 to 18°C.
ALCOHOL CONTENT - 14.5%
WINE PAIRING - Pasta with meat sauce or risotto. Ideal with red meats, game and mature cheeses.
