In the glass — A bright, creamy purple-tinged foam the moment it's poured. Intense ruby with violet reflections. Marked violet on the nose, threaded with red fruit and wild blackberry. The attack is frankly effervescent, then turns to a pleasant fruitiness with body and persistence, and a few spiced notes on the retro-nasal finish.
At the table — The cooking of Mantua and Emilia-Romagna, piadina, pizza, 24-month Parmigiano, Parma ham.
