Amarone is one of the oldest Italian wines.
In the fourth century AD, Cassiodorus, king of the Goths, described a wine called Acinatico. Probably by chance, the production of a completely dry Recioto gave birth to this wine.
After obtaining the DOC in 1968, Amarone represents a small part of Valpolicella's production. Almost nothing has changed since the Cassiodorus time and the production method has remained artisanal.
Amarone is a wine rich in alcohol, glycerin and resveratrol, a wine that cannot be compared to any other in the world, even in terms of longevity.
Garnet red in color, with an intense aroma and dry flavor, it goes well with game dishes, grilled meats and aged cheeses. Served outside of the meal, it is an extraordinary wine of meditation.

GRAPE VARIETY - Rondinella 30%, Corvina 60%, Corvinone 10%.
CHARACTERISTIC - Vines on the hillside located in the heart of Valpolicella, 120 quintals per hectare.
TYPE OF VITICULTURE - Pergola.
HARVEST - Last dekad of September but can go until the end of October.
VINIFICATION - After a rigorous selection of the most exposed and mature bunches or the most suitable for drying, they are placed in wooden boxes and taken to the drying shed. After a long drying period (about three months) in a ventilated and dry environment, the bunches are pressed. The must is then fermented slowly with a maceration of the skins for 25 days.
MATURATION - Two years in barrels, 10 to 18 months in barrels and 4 months of ageing in the bottle.
COLOUR - Brilliant garnet red.
FRAGRANCES - Vinous and intense, alcoholic, ethereal, full, with clear hints of vanilla and with notes of almond and oak.
FLAVOUR - Dry, moderate acidity, pleasant tannic background, austere and full-bodied.
SERVING TEMPERATURE - 16 to 18°C.
ALCOHOL CONTENT - 15.5%
FOOD AND WINE PAIRING - Grilled meats, spicy and aged cheeses.
