Worth clearing up before the confusion sets in: Pecorino is a white grape from Abruzzo and has nothing to do with the cheese of the same name. Cascina del Colle grows it at Villamagna, at 121 metres, on sandy-clay soils.

Vines are row-trained, yielding 100 quintals per hectare. Fermented in temperature-controlled steel vats, then four months in vat.

In the glass — Straw yellow with slight greenish highlights. Fruity on the nose, with floral notes and aromatic herbs. Refreshing acidity on the palate and a moreish finish.

At the table — Fresh cheeses and fish dishes.

Serving — 10–12°C. 13.5% vol. 75 cl.
