Zin Salento Fiano
A pure Fiano white, picked in mid-September, when Apulia's climate softens and the summer heat drops away. Calcareous tuff soils, trellis-trained.
Temperature-controlled fermentation at 18 °C for about eighteen days, then aged in stainless steel.
In the glass — Straw yellow with green reflections, crystal clear. Intense, complex nose of white fruit — apple, pear — over a delicate orange-blossom perfume. Dry, well structured, fresh and savoury on the palate, faithful to the nose.
At the table — Grilled fish, seafood, vegetable antipasti.
Serving — 8 to 9 °C. 13% vol. 75 cl.
