Vino Nobile di Montepulciano DOCG
Vino Nobile di Montepulciano has nothing to do with the Montepulciano grape of Abruzzo — it is Tuscan Sangiovese, known here as prugnolo gentile, and one of Italy's very first DOCGs.
Sangiovese 85%, with Colorino, Ciliegiolo and Canaiolo a raspo rosso. Spurred cordon, 6,500 vines/ha. Fermented in conical Slavonian oak vats under temperature control (33°C maximum), with a two-day cold pre-fermentation maceration and a long maceration on the skins with frequent, gradual pump-overs. Malolactic in Slavonian oak. Twelve months in 5.5 hL casks, then twelve months in 35-50 hL casks.
In the glass — Ruby red. A classic nose of cherry and violet, a touch of warm blackberry, then vanilla and pepper. Very elegant on the palate, with supple, pleasing tannins. A wine that respects tradition while reaching for freshness and real elegance.
At the table — Tuscan cured meats and cheeses, grilled meat, the hearty first courses of the Tuscan table.
Serving — 16 to 18°C. 13.5% vol. 75 cl.
