Bonazzi - Valpolicella Classico Superiore Ripasso
The privileged soil conditions and the right proportion of vines make it possible to obtain this Valpolicella, known throughout the world.
Compared to the classic Valpolicella, the name Superiore indicates an ageing of at least two years.
The name Ripasso derives from the technique used to obtain a more alcoholic, colourful, full-bodied wine with more complex aromas. It consists of returning the classic Valpolicella to the Amarone pomace.
After a good ageing in wooden barrels and an ageing of a few months in the bottle, it is put on sale.
GRAPE VARIETY - Rondinella 30%, Corvina 60%, Corvinone 10%.
CHARACTERISTIC - Autochthonous vineyards on hilly terrain in the heart of Valpolicella Classica (north of Verona), 120 quintals per hectare.
TYPE OF VITICULTURE - Pergola.
HARVEST - October.
VINIFICATION - After a careful selection, the most suitable grapes are crushed during the harvest, vinified and the resulting wine is joined in April with the minced marc of Amarone and Recioto for a brief controlled refermentation of two or three weeks.
MATURATION - 2 years of ageing, two thirds in large oak barrels and one third in barrels.
COLOUR - Ruby red and garnet.
FRAGRANCES - Fine and intense bouquet, reminiscent of cherry and liquorice.
FLAVOUR - Full, sweet, harmonious taste with a slight woody feel. A wine of body and structure.
SERVING TEMPERATURE - 16 to 18°C.
ALCOHOL CONTENT - 13%
WINE PAIRING - Medium dishes, grilled meats, spicy and aged cheeses.
