Nero di Troia

Nero di Troia is the most authentic grape of the Capitanata, in northern Apulia. Here on its own, on due-south-facing slopes around San Severo, on clay, limestone and marl.

Bilateral Guyot training, yield of 9 t/ha. Hand harvest in the second half of October. Skin maceration of around twenty days in small stainless steel tanks at 25 °C, then a minimum of four months in bottle.

In the glass — Intense ruby, bright and vivid, with light violet reflections. Intense, persistent nose of black fruit. Spicy on the palate, on blackberry and liquorice, finishing with dense but supple tannins.

At the table — Red meats, game, aged cheeses.

Serving — 16 to 18 °C, aerating the wine before serving. 13.5% vol. 75 cl.
