Franciacorta DOCG Brut
Franciacorta is not Prosecco's cousin. It is Italy's metodo classico benchmark, made the way Champagne is made: second fermentation in the bottle, time on the lees. This one is organic, 100% Chardonnay, from Cascina Clarabella in Lombardy.
The fruit goes straight to the cellar after picking, is sorted, then gently pressed before fermentation. Second fermentation follows the traditional method, on the lees.
In the glass — Bright golden yellow with a very fine, persistent bead. Mango, apple, papaya and Gallia melon on the nose, trailing other fruity nuances. Light and silky on the palate, velvety without giving up freshness, thanks to the acidity of the fruit. Attractive finish.
At the table — Aperitif, light dishes.
Serving — 8–10°C. 12% vol. 75 cl.
