Doppia Pasta Garda DOC
Doppia pasta isn't a marketing flourish, it's a technique. Half the juice is bled off and vinified separately as rosé, so the red that remains ferments on twice the skins. Hence the concentration. Corvina, from Tenuta Bardali in the Veneto.
In the glass — Deep, almost purple ruby. Black cherry and candied fruit on the nose, with a marked woody note and a minty edge. Ripe red fruit and delicate wood on the palate, solid and balanced in structure; the bleeding makes it full-bodied and vinous.
At the table — Meat dishes, cheese boards, characterful cold cuts.
Serving — 14°C. 13% vol. 75 cl.
