Bel Monte - Greco di Tufo DOCG
Along with Fiano di Avellino, Greco di Tufo is one of Campania's two great white DOCGs. Cantine Forno makes it from 100% Greco, on vines trained to espalier at 4,500 per hectare, yielding 70 quintals per hectare.
Picked in October. After destemming, crushing and gentle pressing, the must settles statically at a 50% yield; the clear juice is inoculated with selected yeasts and ferments in steel. Three months in French oak follow.
In the glass — Straw yellow with golden highlights. Fruity apple and floral jasmine on the nose, lifted by aromatic herbs — thyme, sage. Good structure and a fine weave of freshness and salinity, with lasting lemon and mineral flavours.
At the table — Fish, seafood and shellfish, risottos, unaged soft cheeses.
Serving — 13°C. 13.5% vol. 75 cl.
