Bel Monte - Fiano di Avellino DOCG
Campania's other great white DOCG, and the finer-boned of the two. 100% Fiano, 4,500 vines per hectare on espalier, 70 quintals per hectare.
Harvest is late September into early October. Gentle pressing of destemmed and crushed bunches, static settling at a 50% yield, fermentation of the clear must in steel with selected yeasts. At least six months in bottle.
In the glass — Bright yellow with soft green highlights. A surprisingly fine nose: subtle but persistent floral notes, green apple, juniper berry, over a strong mineral undertow that gives the wine complexity and length. Elegant and rich at once, with real tension between round alcoholic weight and vibrant acidity, and a long aromatic finish.
At the table — Raw or smoked fish carpaccio, oysters, grilled prawns, soft cheeses.
Serving — 14°C. 13.5% vol. 75 cl.
