Compared to the classic Valpolicella, the name Superiore indicates an ageing of at least two years.
Structured wine ideal with traditional Venetian dishes such as meat, risotto and boiled dishes but also with red meats and game.

GRAPE VARIETY - Corvina 40%, Corvinone 30%, Rondinella 30%
TERRAIN - Clay-limestone of moraine origin (morenica).
HARVEST - End of September, by hand, in trays of 5 to 6 kg.
VINIFICATION - The vinification takes place in stainless steel tanks. During a first stage of cold maceration, a second slow fermentation at a controlled temperature and never above 20°C is carried out. The delicate treatment of the skins, pumping over and racking, allow the maximum extraction of polyphenolic compounds and the complete expression of the grapes.
MATURING - Maturation in Slovenian oak barrels for 12 to 14 months.
COLOUR - Ruby red with purplish reflections.
FRAGRANCES - Elegant and complex, it reveals aromas of berries, cherries, raspberries and perennial herbs mixed with spicy notes.
FLAVOUR - On the palate, it is soft and enveloping.
SERVING TEMPERATURE - 16 to 18°C.

FOOD & WINE PAIRING - Traditional Venetian dishes such as meat, risotto and boiled dishes. A structured wine that is also ideal with red meats and game.
