The name originates from one of the symbolic monuments of Montalcino, the Romanesque abbey of Sant'Antimo. Built in the twelfth century at the foot of the hill of Castelnuovo dell'Abate, still today, solitary in the valley surrounded by vineyards, olive groves, and cypresses, it retains the mysticism of yesteryear.

The DOC was wanted by the producers to promote all these quality wines that do not belong to the existing appellations, but which have recently been very successful with consumers.

GRAPE VARIETY - Sangiovese and Colorino Toscano
PRODUCTION AREA - Castelnuovo dell'Abate, at an altitude of 365m.
SOIL CHARACTERISTICS - Clean, calcareous texture, rich in bones.
TYPE OF VITICULTURE - Spurred cordon with a density of 5500 vines/ha.
VINIFICATION - The grapes, after a rigorous selection during the harvest, are vinified in the traditional way with natural yeasts and bacteria.
MATURATION - Ageing in oak barrels for 12 months and maturing for 2 months in bottles before being put on the market.
COLOR - Intense red with purple highlights.
FRAGRANCES - Fresh and fruity.
FLAVOR - Obtained only from indigenous grapes, it is easy to drink, with a full body.
SERVING TEMPERATURE - 16-18°C.
ALCOHOL CONTENT - 14.5%
FOOD AND WINE PAIRING - Red and white meat dishes, medium-aged cheeses.
