A Calabrian Riesling: the idea raises an eyebrow, which is exactly the point. Pacelli grows a grape normally associated with the Rhine and Alsace in the deep south of Italy, and the wine keeps the variety's nerve under a Calabrian sun.

Yields held to 70 quintals per hectare. Fermented in steel vats, then aged ten months in those same vats — no wood, nothing laid over the fruit.

In the glass — Straw yellow with bright highlights. Ripe summer fruit on the nose. On the palate, Riesling's minerality takes over: dry, genuinely fresh, well structured, with remarkable aromatic persistence.

At the table — Shellfish generally, fish soup, risotto, vegetables, fresh cheeses.

Serving — 8–10°C. 13% vol. 75 cl.
